The event took place live on UFC Fight Pass from Kansas City.
Zappitella locked up a Von Flue choke in the fourth round to win the vacant title.
In the co-main event, Lisa Versoza topped Raquel Canuto via split decision.
Jessica Delboni downed Herica Tiburcio, Victoria Leonardo downed Liz Tracy and Helen Peralta bested Jennifer Chieng.
